Chef Vola’s in Atlantic City, New Jersey.  This once hidden culinary gem, which is located in the basement of a home in Atlantic City is now impossible to get into unless you make a reservation weeks in advance.  The Esposito family has done an excellent job in putting together a menu with all your Italian favorites and making sure they taste amazing as well.  I remember many years ago you would only find out about this place if you “knew someone”, now the cat is out of the bag. I have been to this restaurant on four different occasions, one being a bachelor party.  They do not serve alcohol at Chef Vola’s, so you must bring your own wine, beer, or liquor.  The setting is a basement of a house, which is pretty tight quarters.  There is enough room to setup a large table for your bachelor party.  You will be amazed to see how many celebrities have visited this establishments, as their pictures are plastered all over the wall. I recommend to start with an Italian house salad for the table.  Make sure the salad includes Italian meats (salami, pepperoni) and cheese (provolone) along with their unique dressing.  We ordered the crab cakes and the calamari on separate occasions, which were equally good. For entree I would go with either the bone-in veal ptarmigan (wow), or the steak Pittsburgh style (onions, garlic, blue cheese).  I have also tried a taste of the chicken scarpariello as well as the eggplant and chicken ptarmigan.  All these dishes are excellent as you can’t go wrong.  I did not order any of the seafood dishes but others at the table did and were equally impressed. For dessert you must try either their cheesecake or the banana cream pie.  You are going to be extremely full after your meal but you must make room for a bite or two of their amazing desserts. My recommendations:  Get an early reservation and share entrees.  Since this is a bachelor party you do not want to get too full where you can’t get to the nightclubs and strip clubs later on that evening.  The portions are large but not family style so get a bunch for the table and share.  This place is also CASH ONLY, so make sure you bring enough to cover the meal.
